Directions

  1. 1Remove the chicken from the bag and place it on a cutting board.
  2. 2Shred the rotisserie chicken, separating all the meat from the bones and placing the meat in a separate bowl.
  3. 3Place the chicken bones and scraps into a large pot.
  4. 4Fill the pot with enough water to cover the bones.
  5. 5Cut the onion in half and slice the ginger into pieces.
  6. 6Place the onion halves and ginger slices onto a broiler rack.
  7. 7Broil the onion and ginger until they get a good char on them.
  8. 8Add the charred onion and ginger to the pot with the chicken bones.
  9. 9Add chicken bouillon to the pot.
  10. 10Cut green onions into large pieces and add them to the pot.
  11. 11Add a little sugar and a pho spice pack to the pot.
  12. 12Bring the broth to a boil and let it simmer to infuse the flavors.
  13. 13Once the broth is ready, strain out all the scraps and bones from the pot.
  14. 14Season the broth with salt and MSG to taste.
  15. 15Cook the pho rice noodles in boiling water.
  16. 16Drain the cooked pho rice noodles and add them to a bowl.
  17. 17Add the shredded chicken for protein to the bowl with the noodles.
  18. 18Add sliced onions, cilantro, green onions, and bean sprouts to the bowl.
  19. 19Pour the hot broth over the ingredients in the bowl.
  20. 20Serve the pho immediately.
  21. 21Add sriracha and hoisin sauce to taste.
