Costco Rotisserie Chicken Pho

Directions

  1. 1Remove the chicken from its packaging.
  2. 2Remove the chicken's skin and separate all the meat from the bones, placing the meat into separate containers.
  3. 3Place the chicken scraps and bones into a large pot.
  4. 4Fill the pot with enough water to cover the bones.
  5. 5Slice one white onion in half and cut large pieces of ginger.
  6. 6Place the onion halves and ginger pieces on a broiler rack.
  7. 7Broil the onions and ginger until they get a good char on them.
  8. 8Add the charred onions and ginger to the pot with the chicken bones.
  9. 9Add chicken bouillon to the pot.
  10. 10Cut green onions into large pieces and add them to the pot.
  11. 11Add a little sugar to the pot.
  12. 12Add a pho spice pack to the pot.
  13. 13Let the broth simmer.
  14. 14Remove all the solids (bones, onions, ginger, green onions, and spice pack) from the broth using tongs.
  15. 15Strain the broth to remove any remaining small scraps.
  16. 16Season the broth with salt and MSG to taste.
  17. 17Cook the pho rice noodles in boiling water.
  18. 18Rinse the cooked noodles under cold water using a strainer.
  19. 19Add the cooked pho rice noodles to a bowl.
  20. 20Add the shredded chicken to the bowl with the noodles.
  21. 21Add sliced onions, cilantro, green onions, and bean sprouts to the bowl.
  22. 22Pour the hot pho broth over all the ingredients in the bowl.
  23. 23Garnish with Sriracha and Hoisin sauce, if desired.
  24. 24Serve and enjoy your homemade pho.
