  1. 1Massage beef bones and ribs with a light coating of oil and roast them in the oven for 30 to 45 minutes.
  2. 2Fill a large pot with water, add the roasted bones, and bring it to a simmer.
  3. 3While simmering, scrape the fond from the sheet tray and reserve it for later.
  4. 4Skim the surface and remove any impurities every few minutes.
  5. 5Once gently simmering, add salt, rock sugar, fish sauce, and the reserved fat and fond.
  6. 6Cover the surface with a parchment paper lid and let it simmer for about 4 hours.
  7. 7Roast the ginger and onions, rinse the ginger, lightly crush it, and add it to the pot.
  8. 8Cover the surface again and let it simmer for 8 hours overnight.
  9. 9Remove everything from the broth, strain it through a fine mesh strainer, and cool it down with water and ice.
  10. 10Place the strained broth in the fridge for the fat to solidify.
  11. 11Once the fat is solid, separate it from the broth and add the broth back to a pot to warm up again.
  12. 12Roast the spices, add them to a pouch along with some roasted shallots, and add them to the pot with some scallions.
  13. 13Let it steep for about an hour, remove the spice pouch, and finish with a little more sugar and fish sauce.

  • 2 tablespoons coriander seeds
  • 2 tablespoons fennel seeds
