Directions

  1. 1Dunk rice paper in warm water.
  2. 2Add lettuce, scallions, carrots, and cabbage to the rice paper.
  3. 3Pile it on with fresh herbs.
  4. 4Roll it halfway.
  5. 5Add jalapeno, shrimp, and the best avocado you can find.
  6. 6Roll it up tight.
  7. 7Dip it into the homemade peanut sauce and enjoy.
  8. 8To make the peanut sauce, add crunchy peanut butter, gochujang, soy sauce, maple syrup, and hot sauce to a bowl.
  9. 9Add water to thin the sauce.
  10. 10Mix the sauce until well combined.

  • 0.75 lb wild shrimp
  • Rice paper sheets
  • Gem lettuce or butter lettuce leaves
  • 2 Shredded carrots
  • 0.5 cup Thinly sliced red cabbage
  • 4 Scallions, thinly sliced lengthwise
  • Large handful fresh mint
  • lemon basil
  • 2 Jalapeños, thinly sliced
  • 1 large avocado, thinly sliced
  • 2 tbsp crunchy PB
  • 1 tbsp gochujang
  • 1.5 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp hot sauce
  • 0.25 cup water
