1Place three portions of ground chicken on a baking sheet lined with parchment paper.
2Use a spoon to flatten each portion of ground chicken into a circular patty.
3Cut four pieces of parchment paper to place under each chicken patty.
4Add a dollop of cream cheese to the center of each chicken patty.
5Spread the cream cheese evenly over each patty with a spoon.
6Place a handful of spinach leaves on top of the cream cheese.
7Add sliced cherry tomatoes on top of the spinach.
8Sprinkle grated mozzarella cheese over the tomatoes.
9Fold one half of the parchment paper over the chicken patty, then fold the chicken patty in half to create a pocket shape and seal the edges with your hands.
10Brush the top of each chicken pocket with a liquid, possibly oil or egg wash.
11Sprinkle bread crumbs generously over each chicken pocket.
12Place the baking sheet into a preheated oven.
13Once baked, remove the golden brown chicken pockets from the oven and serve with a side salad.
