Directions

  1. 1Thinly slice chicken breast.
  2. 2Add soy sauce, sesame oil, cornstarch, and baking soda to the chicken.
  3. 3Mix well and set aside to marinate.
  4. 4Combine light soy sauce, dark soy sauce, oyster sauce, sugar, and water in a small bowl for the sauce.
  5. 5In a separate bowl, mix a teaspoon of cornstarch with a little water to create a slurry.
  6. 6Set both aside.
  7. 7Slice carrots and baby corn.
  8. 8Snap off the end tips and remove the string from the snow peas.
  9. 9Slice onions.
  10. 10Cut the white part of spring onions into half, then cut it into 2-inch pieces.
  11. 11Prepare fresh minced garlic and ginger.
  12. 12Heat a tablespoon of oil in a pan over medium-high heat.
  13. 13Add the carrots and baby corn.
  14. 14Stir-fry for about 30 seconds.
  15. 15Add the snow peas and sliced onions.
  16. 16Stir-fry everything together for a minute or so.
  17. 17Remove the vegetables from the pan and set them aside.
  18. 18Add a little more oil to the same pan.
  19. 19Add minced garlic and ginger and sauté for a few seconds until fragrant.
  20. 20Toss in your marinated chicken.
  21. 21Stir-fry for about 2 to 3 minutes until it's about 80% cooked through.
  22. 22Pour in the prepared sauce.
  23. 23Add back the vegetables and also the bean sprouts.
  24. 24Toss everything to make sure the chicken and veggies are nicely coated.
  25. 25Add the cornstarch slurry and follow with the spring onions.
  26. 26Give it a good stir and cook for another minute or so until the sauce is glossy.
  27. 27Drizzle a bit of sesame oil over the top.
  28. 28Serve it over a bed of steamed rice or noodles.
