Directions

  1. 1Grate the onions and squeeze out the excess liquid.
  2. 2Chop the dill and parsley.
  3. 3Combine the grated onions, chopped herbs, salt, pepper, and spices in a bowl.
  4. 4Add chicken to the mixture and mix well.
  5. 5Plop the mixture onto a parchment-lined baking sheet and spread it into an even block with wet hands.
  6. 6Cut the mixture into individual kefta shapes using a spatula.
  7. 7Add cherry tomatoes to the sheetpan alongside the kefta.
  8. 8Drizzle olive oil over the kefta and tomatoes.
  9. 9Place the sheetpan into an oven to cook.
  10. 10While the kefta cooks, prepare the condiment by grating garlic into mayonnaise and adding smoked paprika, then mix.
  11. 11Prepare the salad by slicing red onions and chilies, then adding chopped dill and parsley to a bowl.
  12. 12Switch the oven to broil for the last few minutes to brown the kefta.
  13. 13Add the roasted tomatoes to the salad mixture.
  14. 14Dress the salad with lemon juice, salt and pepper.
  15. 15Remove the cooked kefta and roasted flatbread from the oven.
  16. 16Spread the garlic smoked paprika mayo on the flatbread.
  17. 17Place the kefta and salad on the flatbread.
  18. 18Roll up the flatbread to create the sandwich.
  19. 19Crisp up the rolled kefta sandwich in a pan.
