Directions

  1. 1Put four leeks and three onions into the thermomix.
  2. 2Toast the beef bones and ham bones for the infusion.
  3. 3Pour in 3 liters of milk and 3 liters of cream.
  4. 4Add nutmeg and pepper.
  5. 5Add 1.4 kg of butter to a pan and stir well.
  6. 6Add 1 kg of flour to make the béchamel and mix well.
  7. 7Sauté the onion and leek that we had previously blended in the thermomix until well browned.
  8. 8Strain the infusion through a fine sieve.
  9. 9Add the béchamel to the strained infusion.
  10. 10Add 1.5 kg of cecina, spreading it out in portions so it doesn't all stay in one spot.
  11. 11Add 500 gr of San Simón cheese.
  12. 12Once we've worked it enough, put the mixture on a tray and let it cool.
  13. 13Shape the croquette balls, dip them in liquid egg, and then cover them with some panko.
  14. 14Press the panko well so they're nicely breaded, and then put them into the fryer until they turn a deep golden brown.
  15. 15Place them on a base of fried spinach.
