1In a bowl, add 500g of chicken mince, 1 Tsp of salt, 1 Tsp of garlic & onion powder, 1 Tsp of paprika, 1 Tsp of chilli powder, and 1/2 Tsp of cayenne pepper.
2Add 1/2 Tsp of pepper and mix it all together.
3Slightly wet your hands and form four 125g patties.
4Place the patties on baking paper and freeze for 15 minutes to let them firm up.
5On a plate, add 60g of breadcrumbs with a dash of the same seasonings (salt, garlic & onion powder, paprika, chilli powder, cayenne pepper, and pepper) and mix it.
6Once the patties are firm, coat each one evenly with the breadcrumb mixture.
7Add a bit of light cooking oil spray to the coated patties.
8Air fry at 190 °C for 12–15 minutes, or oven bake at 200 °C for 15–18 minutes.
9In a small bowl, add 60g of light mayonnaise, 5g of Sriracha/hot sauce, and smoked paprika, then mix it all together to create the spicy sauce.
10Toast a brioche bun.
11Add half of the spicy sauce to the bottom bun.
12Place two cooked chicken patties on top of the sauce.
13Add a handful of lettuce.
14Place the top bun on the lettuce to complete one Spicy Double McChicken.
15Repeat the assembly process for the other McChicken.
