Drunken Noodles

Directions

  1. 1Chop red chilies, onions, Chinese broccoli, and garlic.
  2. 2Slice beef into bite-sized pieces.
  3. 3Cut fresh rice noodle sheets and separate them.
  4. 4Combine oyster sauce, light soy sauce, thick dark soy sauce, fish sauce, and palm sugar for the sauce.
  5. 5Heat oil in a hot wok until smoking.
  6. 6Sauté garlic, red chilies, and onion until fragrant (1-2 minutes).
  7. 7Add in the beef and sauté until slightly cooked (1-2 minutes).
  8. 8Add in the Chinese broccoli and cook for another couple of minutes.
  9. 9Add in the rice noodles and combine thoroughly with the sauce (1 minute).
  10. 10At the very end, throw in some Thai basil and plate.
  11. 11Garnish with a little more Thai basil.

  • 1 lbs fresh rice noodles
  • 0.5 lbs beef
  • 6 cloves garlic minced
  • 1 onion thick slices
  • 2 red chilies sliced
  • 2 to 3 Chinese broccoli sliced
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tbsp thick dark soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp palm sugar
  • 3 tbsp neutral oil
  • Thai basil

Tips

  • If using dried rice noodles, soak them in hot water for 10 minutes.
  • If using a tougher cut of beef, marinate in 1/4 tsp baking soda, 1 tbsp soy sauce, and 1 tbsp rice wine.
  • Make sure to separate the noodles if you’re using fresh rice noodles.
  • Garnish with a little more Thai basil.
