3Blanch the cauliflower pieces for 2 mins and then strain them. Keep them aside.
4Transfer the cooled down cauliflower pieces into a large bowl and add 0.25 tsp salt, 0.25 tsp pepper powder, 1 tsp red chilli powder, 1 tsp ginger garlic paste and mix everything well.
5Once the cauliflower pieces get coated fully, let them sit aside for 10 mins.
6After 10 mins, add 0.25 cup maida and 0.25 cup corn flour to it. Mix well.
7Heat a kadai with oil and gently drop in the coated cauliflower pieces.
8Fry them on a medium flame until they turn golden brown in color.
9Take 250 gms mayonnaise, 2 tbsp tomato ketchup, 2 tbsp red chilli sauce and 2 tsp red chilli powder in a bowl. Mix well.
10Add this prepared sauce to the fried cauliflower pieces and mix well.
11Dynamite cauliflower is ready, so serve it on a bed of thinly sliced iceberg lettuce and garnish it with spring onion greens.
