Toss peeled and deveined shrimp in a bowl with soy sauce, sesame oil, Shaoxing cooking wine, and cornstarch. Let marinate for 15 minutes.

Slice one onion into squares.

Cut red bell pepper into same size squares.

Slice some spring onions.

Finely mince garlic cloves and a small piece of ginger.

In a small bowl, mix soy sauce, oyster sauce, sugar, white pepper, and water for the stir-fry sauce.

In a separate bowl, mix cornstarch and water to create a slurry for thickening the sauce.
