Directions

  1. 1Heat oil in a pan over medium heat and sauté sliced sausage until browned on all sides.
  2. 2Dice potatoes, slice capsicum, dice onion, and peel/crush garlic.
  3. 3Remove sausage from the pan and set aside.
  4. 4Add onions and capsicum to the pan and cook until slightly caramelized.
  5. 5Add garlic, potatoes, and chicken stock. Bring to a simmer, cover, and cook for 25 minutes.
  6. 6After 20 minutes, remove the lid, return the sausage to the pan, and continue to cook until the stock reduces to a sticky glaze.
  7. 7Garnish with fresh parsley before serving.

Ingredients

  • 1 whole cured smoked sausage
  • potato, diced
  • capsicum, sliced into strips
  • onion, diced
  • garlic, peeled and crushed
  • fresh thyme (optional)
  • 0.5 litre chicken stock
  • salt (optional)
  • pepper (optional)
  • curly parsley, chopped (optional)

Tips

  • Use any cured, smoked sausage if authentic Polish kielbasa is unavailable.
  • Substitute fresh thyme with rosemary or dried herbs.
  • Check the potatoes every five minutes during the simmer.
