Meal Prep McMuffins
Directions
- 1Place six English muffins on a baking sheet.
- 2In a measuring cup, mix together 3 eggs and 1/2 cup of egg whites.
- 3Whisk until light and fluffy.
- 4Pour the egg mixture into a baking pan lined with parchment paper.
- 5Sprinkle with black pepper.
- 6Bake at 400° for 10-15 minutes.
- 7Once cooked, cut the egg mixture into 6 equal rounds using a glass.
- 8Top each English muffin half with a round of egg mixture.
- 9Place a slice of ultra thin Colby-Jack cheese on top of each egg round.
- 10Add either turkey sausage or bacon to each muffin.
- 11Top each with the other half of the English muffin.
- 12Wrap each McMuffin in foil.
