Chebakia Bouchnikha

Directions

  1. 1Sift the flour into a large bowl.
  2. 2Add cinnamon, ground anise, vanilla sugar, baking powder, and a sprinkle of salt to the flour.
  3. 3Add very soft butter and oil to the dry ingredients.
  4. 4Mix the ingredients by hand until well combined.
  5. 5Add orange blossom water, a bit of vinegar, and milk to the mixture.
  6. 6Mix to combine and knead for about 10 minutes until the dough is soft and pliable.
  7. 7Separate the dough into about five even pieces.
  8. 8Roll each piece into a ball and cover with plastic wrap to let it rest for at least 30 minutes.
  9. 9Flour a work surface and roll out the dough by hand into thin rectangles.
  10. 10Pass the dough through a pasta machine to flatten it even more.
  11. 11Pass the flattened dough through a spaghetti cutter to create beautiful strands.
  12. 12Lay out the strands in bunches and pinch them together to form individual pastries.
  13. 13Cut the formed pastries with a knife.
  14. 14Gently fry the pastries in hot oil until lightly golden.
  15. 15Soak the fried pastries in warmed honey seasoned with a splash of orange blossom water for 10-15 minutes.
  16. 16Place the bouchnikha in a strainer basket to drain any excess honey.
  17. 17Garnish with sliced almonds or toasted sesame.

  • 900 g honey
  • 2 t orange blossom water
  • sliced almonds
  • toasted sesame
