Authentic Puerto Rican Yellow Rice and Beans

Directions

  1. 1In a medium-size caldero, add 1 tablespoon of oil.
  2. 2Add 1/4 cup of chopped bacon and sauté until golden brown.
  3. 3Add 2 tablespoons of sofrito and mix well.
  4. 4Add 2 tablespoons of tomato sauce and mix well.
  5. 5Add 2 teaspoons of pimientos and 1 tablespoon of stuffed olives.
  6. 6Add 1 packet of sazon Goya and 1 packet of pork sazon Goya.
  7. 7Add 1/2 teaspoon of all-purpose seasoning.
  8. 8Add 1 can of drained red beans.
  9. 9Add 2 and 1/2 cups of water, stir, and bring to a boil.
  10. 10Add 2 cups of rinsed medium grain rice and stir to combine.
  11. 11Reduce heat to medium, cover, and let it simmer for about 15 minutes, or until most of the water has evaporated.
  12. 12Fluff the rice with a wooden spoon and serve.
