Tips
Blending some of the beans with tofu, nutritional yeast, and miso paste significantly bumps up the protein content and adds creaminess without simmering for ages.
Nutritional yeast is also known as vegan cheese, gives a cheesy flavor, has a lot of different vitamins, is a great source of protein, and also has fiber. It is low-sugar and low-fat.
The dish works really well with cottage cheese bread.
