Biang Biang Hand Pulled Noodles

Directions

  1. 1Add salt to room temperature water, and stir to dissolve.
  2. 2Pour the salt solution into flour in batches and stir it.
  3. 3Start gathering the flour together, make it into a dough and knead it. Scrape the bottom of the bowl.
  4. 4Cover it and let it sit for 15 minutes.
  5. 5Knead it smooth, cover it and let it sit for another 15 minutes. Repeat this process three to four times.
  6. 6Divide the dough into six pieces, and shape each piece into a round smooth ball.
  7. 7Stretch the dough a little bit and tuck it under, so the top of the dough will become smooth and shape it on the working surface.
  8. 8Cover them with a plastic film, so they don't get dry. Gently push out all the air.
  9. 9Let this sit for two hours in room temperature, or chill in the fridge overnight.
  10. 10Take one piece and flatten it with your hand, and then roll it into a thick oval sheet.
  11. 11Drizzle some cooking oil on plate. Coat both sides with the oil, and continue doing the next one. Spread the dough pieces. Cover with plastic film.
  12. 12Get a chopsticks, and press it in the middle.
  13. 13Use both of your hands to slowly and evenly pull it. Try not to focus all the pressure on your thumbs. Give a few more swings.
  14. 14Rip it open right through the middle.
  15. 15Add the noodle to the boiling water and stir it.
  16. 16Add Baby bok choy, let it blanch for 20 seconds, then take everything out.
  17. 17In a big noodle bowl, add soy sauce and chinese black vinegar.
  18. 18Throw in the noodles, sprinkle some diced scallion, red chili flakes, pressing a couple cloves of garlic, salt to taste, and pour hot cooking oil onto the spices and aromatics.
  19. 19Mix it up and you're ready to enjoy.

Ingredients

  • 300 grams high protein flour (bread flour, dumpling or noodle flour)
  • 0.5 tsp salt
  • 150 grams room temperature water
  • Enough cooking oil
  • 3 pieces Biang Biang Noodles
  • A few pieces Baby bok choy
  • 1.5 tbsp soy sauce
  • 1.5 tbsp Chinese black vinegar
  • 2 tbsp diced scallion
  • 1 tsp chili flake
  • 2 cloves garlic
  • to taste salt
  • 2 tbsp cooking oil

Tips

  • High protein flour (bread flour, dumpling or noodle flour) is recomended.
  • Avoid all-purpose flour.
  • After applying plastic film, gently push out all the air.
