Tofu Dan Dan Noodles

Directions

  1. 1Crumble and slightly mash the tofu.
  2. 2Add dark soy sauce, rice wine vinegar, chinese 5 spice powder, sugar, white pepper, and a pinch of msg (optional) to the crumbled tofu.
  3. 3Add the seasoned tofu to a dry pan and spray with a little bit of oil.
  4. 4Cook the tofu for 5 to 7 minutes on medium heat.
  5. 5While the tofu cooks, chop some ginger, garlic, and spring onions (white bit only).
  6. 6Continue cooking the tofu until the chunks dry out and become meaty.
  7. 7Boil the noodles according to package directions.
  8. 8While noodles boil, prepare the sauce by combining sesame paste, chili crisp, sesame oil, light soy sauce, sugar, and black vinegar (optional).
  9. 9Add 4-5 tbsp of the noodle water to the sauce to loosen it.
  10. 10Quickly boil 4-5 broccolini.
  11. 11Mix the sauce and the cooked noodles together until all of the noodles are coated.
  12. 12Assemble by placing the saucy noodles in a bowl.
  13. 13Top with boiled broccolini.
  14. 14Add a generous amount of the cooked tofu crumbles.
  15. 15Garnish with spring onion greens, crushed peanuts, and chili oil.

  • 300 g medium firm tofu
  • 0.5 tbsp dark soy sauce
  • 1 tsp rice wine vinegar
  • 1 tsp chinese 5 spice powder
  • 1 tsp sugar
  • 1 tsp white pepper
  • 1 pinch msg (optional)
  • 1 tbsp neutral oil
  • 1 spring onion stalk (white bit only)
  • 1 tbsp minced ginger
  • 3 cloves garlic chopped
  • 5 tbsp sesame paste
  • 2 tbsp chilli crisp
  • 0.5 tbsp sesame oil
  • 0.5 tbsp light soy sauce
  • 1 tsp sugar
  • 1 tsp black vinegar (you can skip if you don’t have)
  • 4 tbsp noodle water
  • 5 tbsp noodle water
  • 150 g chinese noodles (uncooked weight)
  • 4 broccolini boiled
  • 5 broccolini boiled
  • spring onion greens
  • crushed peanuts
  • chili oil
