1Add 1 cup of granulated white sugar to a pot and place it on medium-high heat.
2Continuously stir the sugar until it melts down, clumps up, and then dissolves into a smooth, dark amber liquid. This should take about 7-8 minutes.
3Once the sugar is completely smooth and amber in color, carefully add 1/4 cup of hot water. The sugar will seize up and steam, but continue stirring until it melts back down and becomes smooth again.
4Add 6 tablespoons of salted butter to the caramel sauce.
5Stir until the butter is fully melted and incorporated into the caramel.
6Once the butter is melted, turn off the heat.
7Add 1/2 cup of heavy whipping cream and stir until well combined.
8Add a little bit of Mexican vanilla to taste.
9Add some flaky sea salt to taste and stir it in.
10Pour the homemade caramel sauce into a clean mason jar.
