Directions

Slice one onion into thin slices.

Slice 2-3 tomatoes into thin slices.

Add 1/2 cup of whole yogurt to a bowl.

Add 1 tablespoon of GG paste.

Add 1 teaspoon of salt.

Add 1 teaspoon of garam masala.

Add 1 teaspoon of red chili powder.

Add 1/2 cup of heavy cream.

Mix the ingredients until they form a smooth paste.

Add 2 lbs of whole chicken (bone-in) to the mixture and coat it completely.

Pour 1/4 cup of ghee or neutral oil into a pan.

Add the sliced onion to the pan.

Fry the onions until golden brown.

Add 1 teaspoon of chili powder to the fried onions.

Add 1/3 teaspoon of garam masala.

Stir the mixture.

Add the sliced tomatoes to the pan.

Add 1-2 teaspoons of tomato paste (optional).

Add 1 teaspoon of salt.

Stir and cook the mixture until the tomatoes soften and form a sauce.

Transfer the tomato mixture to a blender and blend until smooth.

Add 1/2 cup of oil to the same pan.

Add the marinated chicken to the pan.

Cook the chicken until it is browned on all sides.

Place a small piece of aluminum foil in the center of the cooked chicken.

Place a hot coal in the aluminum foil.

Pour a small amount of oil over the hot coal to create smoke.

Cover the pan with a lid to infuse a smoky flavor.

Remove the lid and the coal after a few minutes.

Add 3-4 tablespoons of butter to the pan.

Add 4-5 blended green chilies.

Pour the blended tomato base into the pan.

Stir the sauce and chicken together.

Add the cooked chicken pieces back into the sauce.

Sprinkle dried fenugreek leaves (kasuri methi) over the chicken.

Drizzle heavy cream over the dish for garnish.

Serve the Shahi Koyla Chicken.
