1Drop 2 to 3 pounds of boneless, skinless chicken thighs into a slow cooker and spread them out evenly on the bottom.
2In a separate bowl, whisk together 1 cup of soy sauce (or coconut aminos), 1 cup of brown sugar, 1/4 cup of sliced green onions, 4 or 5 chopped garlic cloves, a healthy pinch of black pepper, and 1 cup of water.
3Pour the whisked sauce all over the chicken thighs in the slow cooker.
4Add a piece of peeled ginger to the slow cooker.
5Put the lid on the slow cooker and set it to low for 3 to 4 hours.
6Once cooked, serve the chicken over fresh steamed rice.
7Pour a little bit of the sauce from the slow cooker on top of the chicken and rice.
8Garnish with more green onions and toasted sesame seeds, if desired.

Tips
