Directions

  1. 1Add rice to an oven-safe dish or Dutch oven.
  2. 2Add beef stock to the dish.
  3. 3Add onions to the dish.
  4. 4Add tomatoes to the dish.
  5. 5Add beans to the dish.
  6. 6Add corn to the dish.
  7. 7Add cilantro to the dish.
  8. 8Add taco seasoning to the dish.
  9. 9Mix all the ingredients in the dish.
  10. 10In a separate pan on medium heat, spray some oil and add garlic, ground beef, and half a packet of taco seasoning; cook and drain excess oil.
  11. 11Top the mixture with ground beef.
  12. 12Add salsa.
  13. 13Top with shredded cheese.
  14. 14Bake uncovered at 375°F for 45 minutes.
  15. 15Serve in a bowl over a bed of lettuce.
  16. 16Add sour cream and avocado.
  17. 17Garnish with additional shredded cheese and cilantro.
