Ayam Goreng Bawang Putih w/ Sambal Aioli

Directions

  1. 1Place chicken drumsticks and thighs into a mixing bowl.
  2. 2Grind shallots, ginger, and lemongrass in a spice and nut grinder.
  3. 3Add the ground shallot, ginger, and lemongrass mixture to the chicken.
  4. 4Add turmeric powder, coriander powder, and white pepper to the chicken.
  5. 5Add rice flour and cornstarch to the chicken mixture.
  6. 6Mix all ingredients thoroughly with the chicken until well coated.
  7. 7Carefully place the coated chicken pieces into hot oil for deep frying.
  8. 8Add garlic cloves to the oil while frying the chicken.
  9. 9Remove the fried chicken and garlic from the oil using tongs and place them in a strainer basket.
  10. 10Soak dried chilies in hot water.
  11. 11Place soaked dried chilies, shallots, garlic, and shrimp paste into a blender.
  12. 12Blend until a smooth paste is formed.
  13. 13Pour the blended chili paste into a pan with hot oil.
  14. 14Stir the chili paste and cook until it darkens and thickens.
  15. 15Add chopped fish sauce to the chili paste.
  16. 16Stir in the fish sauce and continue cooking the chili paste.
  17. 17Transfer some of the cooked chili paste to a wooden bowl and add lime juice.
  18. 18Add an egg yolk to the chili paste and lime juice mixture.
  19. 19Blend the sauce using an immersion blender until smooth and creamy.
  20. 20Serve the fried chicken with the prepared sambal aioli.
