Place chicken drumsticks and thighs into a mixing bowl.

Grind shallots, ginger, and lemongrass in a spice and nut grinder.

Add the ground shallot, ginger, and lemongrass mixture to the chicken.

Add turmeric powder, coriander powder, and white pepper to the chicken.

Add rice flour and cornstarch to the chicken mixture.

Mix all ingredients thoroughly with the chicken until well coated.

Carefully place the coated chicken pieces into hot oil for deep frying.

Add garlic cloves to the oil while frying the chicken.

Remove the fried chicken and garlic from the oil using tongs and place them in a strainer basket.

Soak dried chilies in hot water.

Place soaked dried chilies, shallots, garlic, and shrimp paste into a blender.

Blend until a smooth paste is formed.

Pour the blended chili paste into a pan with hot oil.

Stir the chili paste and cook until it darkens and thickens.

Add chopped fish sauce to the chili paste.

Stir in the fish sauce and continue cooking the chili paste.

Transfer some of the cooked chili paste to a wooden bowl and add lime juice.

Add an egg yolk to the chili paste and lime juice mixture.

Blend the sauce using an immersion blender until smooth and creamy.
