Baked Chicken and Mashed Potatoes
Directions
- 1Rinse the chicken and place it in a bowl with two lemons and white vinegar.
- 2Remove the giblets from inside the chicken.
- 3In a bowl, mix the butter, parsley, and paprika.
- 4Loosen the skin of the chicken and spread the butter mixture under the skin.
- 5Place lemon slices and onion wedges in a baking dish.
- 6Place the seasoned chicken on top of the lemons and onions.
- 7Bake the chicken in the oven at 400°F.
- 8Meanwhile, boil potatoes until tender.
- 9Drain the potatoes and mash with cream.
- 10Serve the baked chicken over mashed potatoes.
