1In a bowl, combine ground chicken, sautéed onion, eggs, breadcrumbs, salt, pepper, Cajun seasoning, paprika, garlic powder, and onion powder. Mix well to form meatballs.
2Place meatballs on a baking sheet and bake in a 400°F oven for 18 minutes.
3In a saucepan, sauté minced onion and garlic in olive oil and butter for 3 minutes.
4Add cherry tomatoes and fresh basil, and cook for 3 minutes.
5Pour in chicken broth and bring to a simmer. Add heavy cream and bring to a light bubble.
6Stir in salt, pepper, Cajun seasoning, white pepper, garlic powder, and onion powder until incorporated.
7Add freshly grated Parmesan and melt. Bring to a light bubble.
8Add spinach and wilt down.
9Add the cooked meatballs to the sauce.
10Serve over mashed potatoes, rice, pasta, or with a side salad.
