Udon Noodles

Directions

  1. 1In a bowl, mix 2 tbsp sugar, 2 tbsp dark soy sauce, 2 tbsp rice vinegar, 1 tbsp mirin, 1 tbsp shur douchi, and 1 tbsp oyster sauce.
  2. 2Boil 1 pound of udon noodles for 2-3 minutes, then drain and rinse to cool.
  3. 3Heat oil in a wok.
  4. 4Add 0.5 pound of ground pork and salt, and cook until browned.
  5. 5Remove the pork and set aside.
  6. 6Cut 1 bunch of green onions into 1-inch segments and add them to the wok.
  7. 7Mince 3 cloves of garlic and add to the wok.
  8. 8Add 1 cup of sliced mushrooms and a bit of salt to the wok.
  9. 9Add thinly sliced napa cabbage to the wok.
  10. 10Add a pinch of white pepper and the cooked noodles to the wok. Stir-fry for about a minute.
  11. 11Add the sauce and let it reduce until glazed.
  12. 12Cut the heat, add more garlic, and toss.
  13. 13Serve with sesame seeds, bonito flakes and green onions.
