In a bowl, mix 2 tbsp sugar, 2 tbsp dark soy sauce, 2 tbsp rice vinegar, 1 tbsp mirin, 1 tbsp shur douchi, and 1 tbsp oyster sauce.

Boil 1 pound of udon noodles for 2-3 minutes, then drain and rinse to cool.

Heat oil in a wok.

Add 0.5 pound of ground pork and salt, and cook until browned.

Remove the pork and set aside.

Cut 1 bunch of green onions into 1-inch segments and add them to the wok.

Mince 3 cloves of garlic and add to the wok.

Add 1 cup of sliced mushrooms and a bit of salt to the wok.

Add thinly sliced napa cabbage to the wok.

Add a pinch of white pepper and the cooked noodles to the wok. Stir-fry for about a minute.

Add the sauce and let it reduce until glazed.

Cut the heat, add more garlic, and toss.

Serve with sesame seeds, bonito flakes and green onions.
