In a large baking dish, add the oil, couscous, vegetables (onion, snap peas, shiitake mushrooms) and half the spice mixture and mix well.

Then add the chicken thighs on top, spray with oil and season well with rest of spice mixture.

Drizzle the hot honey on top of the chicken or add some hot honey spice.

Pour the water in the pan.

Cover with wet parchment paper and bake for 1 hour on 350F.

Uncover and bake for another 20-25 minutes (or 25-30 minutes as per audio).

Serve hot.
Ingredients
2 tbsp. Oil
1.5 cups pearl couscous
1 onion, sliced
2 cups sliced mushrooms
Chicken thighs (I used bone in skin on)
Hot Honey (I used the spice) for drizzle
2 cups water (you want the water to come up half way in the pan)
2 tsp. Salt
1 tsp. Pepper
2 tsp. Sweet paprika
1 tsp. Smoked paprika
1 tsp. Thyme
1 tsp. onion powder
1 tsp. Garlic powder
roughly chopped snap peas
shiitake mushrooms

Tips
Make your Friday sacred, don't be stuck in the kitchen.
Cover with wet parchment paper for the first hour of baking.
