Finely chop two garlic cloves and place in a saucepan with the fillets of two anchovies and some of their oil.

Cook the garlic and anchovies until the anchovies melt.

Add a splash of tomato concentrate and fry it like a sofrito until it achieves an intense color.

Add the pasta directly into the saucepan and mix well so it gets coated with the tomato mixture.

Add the same amount of hot water as the amount of pasta used.

Cover and cook on low heat for the time indicated on the pasta packaging.

Two minutes before the end of cooking, add the black olives and capers and cover again.

Add pieces of queso de tetilla and stir until the cheese melts into a creamy sauce.

Serve with fresh basil leaves on top.
Ingredients
1 package pasta
1 jarful water
1 piece queso de tetilla, chopped into small pieces
1 splashed tomate concentrado
2 filet anchoas en AOVE
1 handful aceitunas negras
1 tsp alcaparras
2 whole ajos, finely chopped
1 handful albahaca fresca
sal (optional)
pimienta negra (optional)
