Dice the salmon into small cubes.

In a bowl, whisk together olive oil, soy sauce, sesame oil, minced garlic, grated ginger, and sesame seeds.

Add the diced salmon and green onions to the bowl and mix well.

Cut the nori sheets into 12 squares.

Press the nori squares into the muffin tin.

Fill each nori cup with sushi rice.

Top with the salmon mixture.

Bake at 400 degrees F for 12-15 minutes.

Prepare the sauce: In a small bowl, whisk together sesame oil, soy sauce, honey, sriracha, and sesame seeds.

Drizzle the sauce over the baked salmon cups and garnish with green onions.
