Directions

  1. 1Start by cutting up the bell peppers and onions.
  2. 2Add some oil to the pan.
  3. 3Add the diced bell peppers and onions to the pan.
  4. 4Sauté the vegetables for about 5 minutes until the onions become translucent.
  5. 5Move the sautéed vegetables to the side of the pan.
  6. 6Add one pound of ground beef to the pan.
  7. 7Chop up the ground beef and cook it thoroughly.
  8. 8Move the cooked ground beef and vegetables to the side and remove the excess oil from the pan.
  9. 9Add one cup of instant rice to the pan.
  10. 10Add one whole can of diced tomatoes with juice.
  11. 11Add one tablespoon of jarred garlic.
  12. 12Add some pepper.
  13. 13Add one package of taco seasoning.
  14. 14Add one can of fire-roasted corn.
  15. 15Add one can of black beans.
  16. 16Add two tablespoons of roasted green chili.
  17. 17Add one and a half cups of beef broth.
  18. 18Stir everything together.
  19. 19Cover the pan and simmer for 20 minutes.
  20. 20Top the cooked mixture with Mexican blend cheese.
  21. 21Add green onions on top.
  22. 22Sprinkle with cilantro or parsley.
  23. 23Drizzle with Crema Mexicana.
