In a big skillet over medium heat, add 1 pound of ground beef and 1 diced onion with seasonings.

Once the beef is cooked, lower the heat and add 1 tablespoon of minced garlic and 1 cup of rinsed rice.

Add 1 can (10 ounce) of diced tomatoes and 1 can (8 ounce) of tomato sauce.

Pour in 1.5 cups of beef broth and make sure all the rice is drowned.

Cover with a lid and let it cook on medium-low heat for 15 to 20 minutes.

Remove the lid and fluff the rice. Then top with 2 cups of freshly shredded cheddar cheese and bake for a minute to get the cheese melted.

When it comes out of the oven, top with some fresh cilantro and serve with tortilla chips.
