Cowboy Butter Chicken

Directions

  1. 1To a hot pan, turn off the heat and remove from heat, then add the butter, making sure it is soft and not completely melted.
  2. 2Add minced shallot, minced garlic, dry thyme, chili flakes, smoked paprika, cayenne, Worcestershire sauce, Dijon mustard, and salt to the pan.
  3. 3Whisk the ingredients together and put on low heat for one minute.
  4. 4Remove the pan from heat and add fresh parsley and green onions, mixing them in.
  5. 5Season the chicken with lemon pepper seasoning, paprika, cayenne, salt, and olive oil, then mix to coat the chicken.
  6. 6In a pan with olive oil, sear the chicken for 3-4 minutes on each side until cooked.
  7. 7Remove the seared chicken to a plate.
  8. 8Brush the cowboy butter sauce generously onto the chicken.
  9. 9Serve the cowboy butter chicken hot, perhaps over rice, pasta, or mashed potatoes, and enjoy with a cold beer.

  • 1.5 Sticks Butter
  • 6 Garlic Cloves
  • 1 Medium Shallot
  • 2 Tbsp Fresh Parsley
  • 2 Tbsp Green Onions (green part)
  • 1 Tsp Dry Thyme
  • 0.5 Tsp Red Pepper Flakes
  • 0.5 Tsp Cayenne Pepper
  • 0.5 Tsp Smoked Paprika
  • 1 Tbsp Worcestershire Sauce
  • 1 Tbsp Dijon Mustard
  • 1 heaping teaspoon Salt
  • 1.5 pounds Chicken
  • 1.5 tablespoons Lemon Pepper Seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Cayenne
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive Oil
