Heat ghee in a pan and fry sliced onions until dark, golden brown, then remove them.

In the same ghee, sauté chopped garlic until it takes on a little color, then add chopped tomatoes and cook until softened.

Add the previously fried onions back into the pan and stir.

Add ginger paste, cumin seeds, and crushed coriander seeds. Stir to combine.

Add green chillies, turmeric, salt, and chilli powder. Stir well.

Add chicken thigh pieces, stir, and fry until almost cooked.

Cover and steam the chicken.

Check that ghee has separated from the masala, then add beaten plain yogurt, more coriander seeds, and dried fenugreek.

Pour in cream and stir.

Finish with a final sprinkle of dried fenugreek and garam masala, stir, and garnish with green chillies.

750 g chicken thigh
2 whole onion
2-3 whole tomato
3 tbsp ghee
4 clove garlic
1.5 tsp ginger paste
1 tsp cumin seed
1 tsp coriander seed
1 tsp turmeric
1 tsp chilli powder
3-4 whole green chilli
salt (optional)
1 tsp garam masala
2 tsp dried fenugreek
1 cup plain yogurt
1/2 cup cream (optional)
