Spicy Fish and Chips

Directions

  1. 1Give a potato a low fade, then make a couple thicker slices, then make three thick matchsticks.
  2. 2Boil potatoes in water with a little vinegar.
  3. 3Salt and portion out cod and put it in the fridge for at least one hour.
  4. 4For the dry batter: add rice flour to normal flour, add baking powder, curry powder, cayenne pepper, garlic powder, salt and pepper.
  5. 5Whisk in really cold carbonated water until it's almost a light pancake batter consistency.
  6. 6Add hot sauce for a nice tone of heat.
  7. 7Once potatoes are fork tender, lay them out and let them cool off.
  8. 8First fry at 350 for a couple minutes.
  9. 9Pull out the chips, the last fry will be when we do the fish.
  10. 10Toss parchment paper into the oil so nothing sticks.
  11. 11Dunk the cod in some plain flour, then batter your fish and toss it in.
  12. 12Allow to rest on a wire rack. Hit it with flaky sea salt.
  13. 13Once done with the fish, flash fry the fries.

  • 1 cup carbonated water
  • 1 dash hot sauce
  • 1 pinch flaky sea salt
  • 3 cups oil
