Directions
1
Give a potato a low fade, then make a couple thicker slices, then make three thick matchsticks.
2
Boil potatoes in water with a little vinegar.
3
Salt and portion out cod and put it in the fridge for at least one hour.
4
For the dry batter: add rice flour to normal flour, add baking powder, curry powder, cayenne pepper, garlic powder, salt and pepper.
5
Whisk in really cold carbonated water until it's almost a light pancake batter consistency.
6
Add hot sauce for a nice tone of heat.
7
Once potatoes are fork tender, lay them out and let them cool off.
8
First fry at 350 for a couple minutes.
9
Pull out the chips, the last fry will be when we do the fish.
10
Toss parchment paper into the oil so nothing sticks.
11
Dunk the cod in some plain flour, then batter your fish and toss it in.
12
Allow to rest on a wire rack. Hit it with flaky sea salt.
13
Once done with the fish, flash fry the fries.
