Serves 1

Directions

  1. 1Combine tamarind paste, palm sugar, chilli flakes, garlic, fish sauce, and oil in a bowl to make the marinade.
  2. 2Add chicken wings to the bowl and rub the marinade into the wings thoroughly.
  3. 3Cover and marinate. Ideally overnight, but half an hour is enough.
  4. 4Place wings on a tray lined with tinfoil, ensuring each is well-coated in the glaze.
  5. 5Roast in the oven at 170°C for 25 to 30 minutes.

Ingredients

  • 1 tbsp tamarind paste
  • 2 tbsp palm sugar
  • chilli flakes
  • 1 tbsp garlic
  • 1 tbsp fish sauce
  • 2 tbsp oil
  • chicken wings

Tips

  • The longer you marinate the wings, the better.
  • Using tinfoil helps prevent the wings from sticking and burning.
