Directions

  1. 1Roll each tortilla tightly and cut into 6 equal pieces.
  2. 2Place each tortilla piece in a muffin tin cup.
  3. 3Pour a whisked egg into each tortilla cup.
  4. 4Add a slice of cheese to each tortilla cup.
  5. 5Season with salt and pepper.
  6. 6Bake in a preheated oven until the eggs are cooked and the cheese is melted and bubbly.
