Jamaican Saltfish Fritters (Stamp & Go)

Directions

  1. 1Rinse and boil the saltfish for 15 minutes to remove excess sodium.
  2. 2Prep the ingredients: mince the garlic, slice the scallions, remove thyme leaves, slice sweet peppers (need one cup), and slice half a cup of onion.
  3. 3Break up the boiled saltfish into small pieces.
  4. 4In a bowl, mix together all-purpose flour, black pepper, turmeric, and baking powder.
  5. 5Add sweet pepper, scallions, onion, thyme, garlic, and saltfish to the flour mixture and mix everything together.
  6. 6Add coconut milk (or water) to the mixture until it has a consistency that is not too dry or too loose.
  7. 7Preheat corn oil in a pot over medium heat.
  8. 8Drop scoops of the fritter mixture into the hot oil.
  9. 9Fry for three to four minutes on each side.
  10. 10Flip the fritters over after 3 minutes.
  11. 11After frying for a total of seven minutes, remove the fritters from the oil.
  12. 12Place the fritters on something to drain excess oil.
  13. 13Serve the Jamaican saltfish fritters with a dipping sauce.

  • 1 bongra fresh thyme
  • 1 cup Sweet peppers (red, yellow, green, orange)
  • 0.5 cup Onion
  • 2 cups all purpose flour
  • 0.5 teaspoon black pepper
  • 1 teaspoon turmeric
  • 1 teaspoon baking powder
  • 1.5 cups coconut milk
  • Corn oil
  • Mayonnaise
  • Yellow mustard
  • Cayenne pepper
  • Honey
  • Garlic powder
  • Parsley

  • Always make sure you put them on something where they could drain the excess oil.
