Heaven and Earth (Himmel und Erde)

Directions

  1. 1Peel and cube the potato into similar sized chunks as the apple.
  2. 2Cut the green apple into similar sized chunks, aiming for equal parts potato and apple.
  3. 3Place the cubed potatoes and apples into cold water and boil until soft.
  4. 4Melt some butter in a pan.
  5. 5Add the onion to the melted butter to caramelize.
  6. 6Coat the onions in the fat and separate them, then cover and turn the heat to medium-low to caramelize faster.
  7. 7Stir the onions every three to four minutes, scraping any bits from the bottom.
  8. 8Once the onions reach a certain stage, uncover them, add salt, and finish cooking them uncovered.
  9. 9Strain the boiled potatoes and apples.
  10. 10Let the strained potatoes and apples steam dry for about 5 minutes.
  11. 11Transfer the potatoes and apples to a pot with some thinly sliced butter.
  12. 12Mash the potatoes and apples with a potato masher for a chunkier consistency.
  13. 13Season the mash with salt, white pepper, and freshly grated nutmeg, then mix well.
  14. 14Plate the dish, making a small well on top.
  15. 15Top the mash with the caramelized onions.
  16. 16Drizzle melted butter all over the top of the dish.

Tips
