Smoked Chocolate Chili

Directions

  1. 1Fire up the Weber Searwood to 430 degrees Fahrenheit.
  2. 2Cut chuck steak into chunks.
  3. 3Dust the chuck steak with Kay's Best Garlicky BBQ seasoning.
  4. 4Add butter to a large cast iron pot.
  5. 5Add diced sweet onion and diced red bell pepper to the pot.
  6. 6Add ground beef to the pot with the vegetables.
  7. 7Break up the ground beef as it cooks.
  8. 8Add 5 cloves of fresh garlic to the pot.
  9. 9Add a can of diced tomatoes to the pot.
  10. 10Let the mixture cook.
  11. 11Install the griddle insert.
  12. 12Sear the seasoned beef chunks on the griddle insert until browned.
  13. 13Add the seared beef chunks to the pot with the cooked mixture.
  14. 14Add 2 tablespoons of cacao powder to the pot.
  15. 15Add cayenne pepper to the pot.
  16. 16Add chili powder to the pot.
  17. 17Add water to the pot.
  18. 18Mix all ingredients together in the pot.
  19. 19Close the grill and let the chili simmer and smoke for 3 to 3.5 hours.
  20. 20Serve the chili hot.
  21. 21Garnish with shredded cheddar cheese, sour cream, and fresh parsley.

  • 0.5 teaspoon salt

  • 1 cup water
  • shredded cheddar cheese

  • parsley
