Chili Cheese Beef Burritos

Directions

  1. 1Add diced sweet potatoes to a bowl, some avocado oil, salt, pepper, and chili powder.
  2. 2Toss the sweet potatoes in the oven to roast.
  3. 3Add 2% cottage cheese, American cheese, fire roasted tomatoes, chipotle peppers in adobo, salt, pepper, and garlic to a blender.
  4. 4Blend until smooth to make the chili cheese sauce.
  5. 5Cook the beef.
  6. 6Add in two packets of chili or taco seasoning to the beef and mix.
  7. 7Pour the blended chili cheese sauce over the beef.
  8. 8Add in a cornstarch slurry (2 tbsp corn starch mixed with 2 tbsp cold water) to help thicken it up.
  9. 9Add in some chopped cilantro or green onions.
  10. 10Mix your chili beef with your sweet potatoes and some sharp cheddar cheese.
  11. 11Toss that in the fridge or freezer to let it thicken.
  12. 12Layout 16 burrito-sized tortillas.
  13. 13Add a spoonful of fat-free Greek yogurt or sour cream to each tortilla.
  14. 14Roll the burritos.

  • 300 g 2% cottage cheese
  • 100 g American cheese
  • 410 g fire roasted tomatoes
  • 200 g chipotle peppers in adobo

  • 2 tbsp corn starch
  • 2 tbsp cold water
  • 150 g sharp cheddar cheese
  • 1 handful chopped cilantro or green onions
  • 16 burrito sized tortillas
  • 1 spoonful 0% Greek yogurt
