Directions

Heat the water until it's lukewarm.

Pour it into a bowl and mix in the cane sugar and whisk until it's dissolved.

Add active dry yeast.

Let this hang out for 15 minutes to allow the yeast to activate.

Mix dry ingredients (flour, sea salt and baking powder).

Add the yeast mixture to the flour.

Add neutral flavored oil.

Mix the dough with a fork until it becomes basically impossible to keep mixing and gets really shaggy.

Knead it with your hands.

Cover it with a clean dish towel and let it rest in your oven with the light on.

Take the dough out of the oven.

Lightly punch it down to release the air and briefly knead it again.

Divide the dough into 8 equal portions.

Roll each piece of dough into a ball.

These dough balls need to rest for another 10-15 minutes.

Grab a dough ball and put it on your work surface and roll it out almost as thinly as you can.

Add a few sprinkles of chopped cilantro to boost the flavor and pat it down with the rolling pin to make sure it sticks.

Dampen your hands with some water to help pick up the naan, and then you're going to pat a bit of water all over the back side of the naan.

Preheat a cast iron skillet over medium-high heat until it's nearly smoking.

Dampen your hands to make it easy to pick up the naan and carefully place it in the hot skillet, watered side down.

Cover the pan with a lid and cook for 30-40 seconds.

Brush vegan butter onto the naan.

Sprinkle a little bit of water over the naan.

Tips
Test the yeast mixture in advance to ensure your yeast is still good.

Oiling your hands helps bring the dough together and prevents your hands from getting sticky.
If the dough feels dry, add just a few drops of lukewarm water.
Do not skip the step of adding water all over the backside of the naan. This is how the naan is going to stick to the hot pan.
The naan is best served warm with a little bit of melted vegan butter brushed on top and a sprinkle of flaky sea salt.
