Greek Parmesan Chicken & Potatoes

Directions

  1. 1In a bowl, mix melted butter, grated Parmesan, minced garlic, and black pepper.
  2. 2Pour the mixture into a baking dish.
  3. 3Add baby potatoes and chicken thighs to the dish.
  4. 4Drizzle olive oil over the chicken and potatoes.
  5. 5Season with oregano, paprika, salt, pepper, and garlic powder.
  6. 6Add dijon mustard and fresh lemon juice to the chicken.
  7. 7Massage the seasonings into the chicken.
  8. 8Grate lemon zest over the chicken.
  9. 9Add olive oil and salt to cut garlic bulbs wrapped in aluminum foil.
  10. 10Sprinkle grated Parmesan over the chicken and potatoes.
  11. 11Bake until the chicken is cooked and golden brown.
  12. 12Spoon sauce over the chicken and garnish with dill and lemon slices.
  13. 13In a bowl, mix plain Greek yogurt, roasted garlic, fresh dill, grated cucumber, olive oil.
  14. 14Serve the chicken and potatoes over the tzatziki sauce.
