Cut half an onion, half a yellow pepper, and half a red pepper into bite-sized pieces.
Cut about a pound of sirloin tender steak into thin strips.
Add the steak to a baggy.
Add 1 tablespoon of oyster sauce, 1 teaspoon of cornstarch, 2 tablespoons of less sodium soy sauce, 0.5 teaspoon of baking soda, 1 teaspoon of sugar, and 0.5 teaspoon of black pepper to the baggy with the steak.
Close the bag and give it a good shake to coat all the steak pieces.
Set the steak aside to velvet.
In a separate bowl, add 0.5 cup of water, 4 tablespoons of less sodium soy sauce, 2 tablespoons of oyster sauce, 2 tablespoons of hoisin sauce, 2 teaspoons of sugar, 2 teaspoons of cornstarch, and 2 teaspoons of dark soy sauce.
Mix everything really well to create the sauce mixture.
In a pan, add your favorite oil (e.g., avocado oil).
Add the marinated steak to the pan and cook it to about 50%.
Add all the cut vegetables and mushrooms to the pan with the steak.
Cook the vegetables and mushrooms down some.
Give the sauce mixture a stir and pour it into the pan.
Let the mixture simmer.
