Directions

  1. 1Start by activating the yeast in warm water and then mix it with salt, olive oil, and flour.
  2. 2Knead the mixture until it forms a smooth, elastic dough.
  3. 3Lightly oil the dough and let it rest in a bowl for one hour until it doubles in size.
  4. 4After an hour, divide the dough into equal portions using a dough scraper.
  5. 5Roll out each portion into a small, round disc.
  6. 6Place the rolled-out dough discs on a baking sheet lined with parchment paper and cover them with a kitchen towel for 15 minutes.
  7. 7Heat a dry, non-stick pan until it's smoking hot.
  8. 8Place a dough disc in the hot pan and cook until it puffs up and turns golden brown on both sides.

Tips

  • For a successful pita, the dough must rise and puff up during cooking; otherwise, it's just a flatbread.
  • The pan should be dry and smoking hot.
  • Not too thin, not too thick, you want a pocket, not a pancake.
  • Your pita will go fantastic with any of your dips, and it's a must-try with labneh.
