Prepare the filling by mixing mashed potatoes, crumbled paneer, finely chopped green chilies, chopped coriander, ginger, cumin seeds, and diced onions in a large bowl.
Mix the ingredients thoroughly to create a homogeneous filling.
Take a portion of the prepared dough and flatten it slightly.
Place a generous amount of the filling in the center of the flattened dough.
Gather the edges of the dough around the filling to seal it completely, forming a ball.
Dust the stuffed dough ball with flour.
Gently flatten the dough ball into a disc shape using your hands or a rolling pin, ensuring the filling is evenly distributed.
Sprinkle some dried fenugreek leaves on top of the flattened kulche.
Carefully place the kulche inside a hot tandoor to cook.
Once cooked and golden brown, remove the kulche from the tandoor using tongs.
Generously apply butter over the hot kulche.
Break the kulche into pieces to release the steam and serve hot with chole (chickpea curry).
