One-Pan Greek Parmesan Chicken & Potatoes

Directions

  1. 1Melt the butter in a bowl.
  2. 2Add grated parmesan and minced garlic.
  3. 3Pour the mixture into a baking dish.
  4. 4Add baby potatoes.
  5. 5Add chicken thighs.
  6. 6Drizzle olive oil over the chicken.
  7. 7Sprinkle a mix of oregano, paprika, salt, pepper, and garlic powder over the chicken.
  8. 8Add dijon mustard and fresh lemon juice on top.
  9. 9Rub the spices on the chicken thighs.
  10. 10Add lemon zest on top.
  11. 11Add olive oil and salt to garlic heads on a foil.
  12. 12Add grated parmesan on top of the chicken thighs.
  13. 13Bake until golden brown.
  14. 14Drizzle pan juices over the chicken.
  15. 15Add plain greek yogurt to a bowl.
  16. 16Add fresh dill and grilled eggplant.
  17. 17Add grated cucumber and olive oil.
  18. 18Mix all the ingredients to make a sauce.
  19. 19Serve the chicken and potatoes over the sauce. Add lemon juice, dill, and parmesan on top.
