Directions
- 1Tear the tofu into chunks and toss it with cornstarch and salt.
- 2Fry the tofu in oil until crispy and golden brown.
- 3Make a glaze by mixing agave or maple syrup, lemon juice, paprika, ground coriander, cumin, chili powder, garlic powder, salt, and water.
- 4Pour the glaze over the tofu and let it coat completely.
- 5Score the tofu and make a soy glaze with soy sauce, agave, vinegar, hoisin sauce, sesame oil, and garlic powder.
- 6Add the glaze to the tofu and bake at 200C/400F for 20 minutes.
- 7Crumble the tofu in a bowl and add onion, garlic, herbs, tomato sauce, spices, flour and salt.
- 8Knead well and shape into small patties or balls.
- 9Fry in oil until golden brown.

- 2 cloves garlic
- 1 big handful parsley
- 1 big handful mint
- 3 tbsp tomato sauce
- 6 tbsp flour
- 0.5 tbsp red wine vinegar
