Cut the entire pineapple in half, keeping the top on both halves.

Make a small slit on the bottom and top of each pineapple half, being careful not to cut all the way through.

Cut all around the edges of the pineapple flesh.

Make many vertical and horizontal lines in the pineapple flesh to create small chunks.

Scrape all the pineapple out into a bowl.

Add one large tub of half-thawed Cool Whip and two softened blocks of cream cheese to the bowl.

Mix the ingredients for about 4 minutes to ensure the pineapple is well distributed.

Using a spoon, scoop the filling back into the pineapple halves.

Place the filled pineapples on a charcuterie board.

Serve with graham crackers.

Tips
Do not cut all the way through the pineapple shell when making the slits, as it will be used as a serving dish.
