1To a medium bowl, add one egg, one can of pumpkin puree, a quarter cup of vegetable oil, and a quarter cup of milk of your choice. Add one tablespoon of vanilla and mix until cohesive.
2To a separate bowl, add one and three-quarter cups of all-purpose flour and three-quarter cups of granulated sugar, two teaspoons of baking powder, a dash of cinnamon, cardamom and salt. Whisk.
3Add the wet ingredients into the dry and mix.
4For the streusel top, add half a cup of granulated sugar, a quarter cup of all-purpose flour, and four tablespoons of butter cut into little cubes. Rub them together to make little pea-size crumbles.
5Distribute the batter into the muffin tins using an ice cream scoop.
6Add half a teaspoon of cream cheese into each muffin tin.
7Put the crumble on top of the muffins and bake for 30 to 35 minutes.
8Let cool in the pan for a couple of minutes and enjoy.
